Isn't the bread inside raw? If not, then it's not the bread machine's fault.
And since sourdough bread, then apparently the problem is different - the top falls off, and this happens in the case of excessive proofing time, if yeast is added in parallel, then there can be a lot of them, a lot of liquid. Read the theory about sourdough rye breads - you might see what you are doing wrong.
And the programs in LG bread makers are not very suitable for sourdough bread.

I have an LG HB-205CJ bread maker. She categorically refuses to bake bread from mixed flour with high quality! What is meant. I knead the bun as usual, I achieve the desired consistency (the density of the earlobe or a little tighter), the "Basic" mode, the bread is perfect, just like plain wheat. But as soon as baking begins, the roof falls off immediately. Dents, of course, do not work, but the hump is not convex, but such a "hole-mound", the crumb is baked, but slightly compacted. Wheat-rye (even with 2 tablespoons of rye flour), corn, with mashed potatoes, with semolina, even just with bran it does not work. And today a handful of seeds were poured into the checked wheat - and that's it, opal!
I used to think that somewhere in the crack the air was sucked in and a draft was obtained. I cover the window and door with a towel. Sometimes it helps. But not always. With wheat-rye - generally a problem.

It is baked inside everything as always, only exactly half a bucket in height. The set of ingredients is selected for the optimal service life. We also tried other flour and yeast - without results. Dismantled and examined inside, cleaned everything - it was slightly flour. Visually no damage. Voltage is normal - there is a stabilizer for the whole house. The heating element heats up, the resistance of the temperature sensor at 25 C is about 103 kOhm. Who faced this problem. The stove is super-duper, do not buy a new one ((((I would be grateful for the tips. I really look forward to your advice. Thank you in advance.

The edge of the kneading knife adjacent to the bucket - (Teflon) is melted. I thought: why, because I did not break anything. Maybe there is a temperature sensor in those wiring that you did not screw to the wall? and, dangling inside the case, did the sensor transmit the temperature incorrectly? Tell me please! And I didn't fasten it because the fasteners (the screws are there, not the screws) are all of the same thread, and the screw fails into the hole that is intended for screwing the wires inside the case. I would like to consult with the experts who come here regarding the repair of the LG HB-155CJ bread machine. I read the previous error messages "Er3", got acquainted with the log, but I'm not sure about the solution to the problem.
Anamnesis: the stove served for 2.5 years, baked 2-3 loaves a week + jams + dough.
Recently (5-6 times) the bread has become insufficiently suitable, which is probably a sign of insufficient heating during baking. Baking of the last bread ended on time, but not with the regular heating message: "[H]", but with the notorious error "Er3".
When turned on, the mentioned error is immediately issued, accompanied by a beeper, no operations are possible. Pressing the stop button again issues a beeper signal.
Attempt to diagnose:
1. Disassembled.
2. I checked the power supply: at the output of the stabilizer microcircuit, there are + 5V.
3. I checked the resistance of the thermistor in the temperature sensor - about 83 kOhm at +28 degrees. (I'm not sure if this is a normal mode, since many here write about 100 kOhm at +25. Although the thermistor demonstrates some "life" - a noticeable decrease in resistance from the heat of the hand.)
Experts, please advise how to reanimate the bread maker?
Change the thermistor? Check / change the control transistor C107M at the input of the temperature sensor?
