Wheat rye bread on kvass in a bread maker

Ingredients

Wheat flour, premium grade 400 g
Peeled rye flour 100 g
Water 160 ml
Kvass 200 ml
Salt 1.5 tsp
Brown sugar 3 tbsp. l.
(can be normal, but with brown the result is slightly better)
Vegetable oil 1-1.5 Art. l.
(preferably olive)
Dry yeast 1.5 tsp
Ground coriander and caraway seeds (you can do without them - a matter of taste) 1 tbsp. l.
Panifarin 1 tbsp. l.

Cooking method

  • Pour yeast into a bucket, flour and other dry ingredients on top, carefully pour in water with kvass and, finally, vegetable oil. We launch the program "Rye" (Panasonic has 3.5 hours with one batch of 13 minutes). All! The bread is high, well-baked with excellent elasticity.

And I bake bread according to approximately the same recipe, only instead of bread kvass I add whey and add dry bread kvass to the flour.
If I add 2 tablespoons of bread kvass, it turns out dark rye bread with a great taste, and if you add 3 tablespoons - it's almost like "Borodinsky"

But what if there is no panifarin? Do you want such bread !?

I find it difficult to answer what will happen without panifarin. In principle, I can try to bake bread without it and issue a report.

How much whey and how much water? I have not seen dry kvass on sale here (obviously, I did not pay attention).

In general, I have reduced the amount of liquid by 15 ml. and added one small egg instead of panifarin. The splendor, of course, worked a little, but not much.

I completely replace liquid bread kvass and water with whey.
And I buy dry bread kvass in branded bakery stores, less often in supermarkets.

the first bread with rye flour - I was afraid so that my hands were shaking)))

4 tbsp. I added spoons of flour, since the dough was liquid,
added only Art. a spoonful of coriander, because homemade cumin just hate it))
and everything else is strictly according to the recipe!))))
just delicious bread turned out !!!
