Soufflé in lemon baskets

Ingredients

large lemons 6 pcs
egg yolks 3 pcs
egg whites 4 things
sugar 5 tbsp. l
lemon zest 1 tbsp. l
tartar (not used) pinch
lemon juice 2 tbsp. l

Cooking method

  • I made a soufflé for testing in lemon baskets. I took the recipe from the same J. Butler. He has many more - we will try everything!
  • It cooks very quickly - while the oven is warming up to 190 * C.
  • Cut the lemons in half, remove the pulp to make baskets. To facilitate this process, there are probably some devices. I used a regular knife with a curved tip and a spoon.
  • Save 2 tbsp for the souffle. spoons of juice, remove the rest of the juice and pulp for other recipes.
  • Soufflé in lemon baskets
  • Cut off the center of the bottom of each basket - for stability. Beat until thickened yolks with 4 tbsp. l sugar. Add lemon juice and zest there.
  • Beat the whites with the tartar separately (I did without it). Add 1 tbsp. l sugar and beat in a strong foam.
  • Gently mix the whipped whites with the yolks, fill the halves of the lemons with the resulting souffle, put them on a baking sheet and bake for 15-20 minutes until golden brown.

Therefore, in order to feel and enjoy the soufflé to its fullest, you need the same airy basket for it. The dough will be rough. If you use it, then make the soufflé harder.
