During this time, I baked French from it 1 time (in HP LG) - it turned out excellent, very worthy, although, of course, I added saf-moment yeast at the tip of the knife for insurance. And I just started it for a rye loaf. And loving Borodinsky, and began with him. I chose "Borodino bread, according to the recipe of 1939" from Mikulishna. Once I baked in my LG according to the recipe. It turned out damp, about like right now. Once baked in a cartoon, this one was better, but the top-roof naturally required turning and baking, at this moment the bread and "squeezed" from the side of the roof. After reading about the wonders of HP Panasonic about rye, killing the waiting time for my car from the service, I "staggered" around the shops in Murmansk, bought a Redmond 110 (well, I didn't have a pressure cooker, and sometimes I have to), and at the same time I looked closely at HP Panasonic. The choice of exactly 2502 happened in connection with the design (I went to the previous purchase, and not only to it, and the functions of 2501 and 2502 are almost identical, as far as I understood from the descriptions).
I returned home late (I still had to go 100 km), and I was tired, so I started the test only with a cartoon. It all happened superbly!
But the next day, she started Borodinsky. So.
According to the recipe ZAVARKA plus OPARA. The first is made as per the recipe. A "Stage 2 - OPARA:
All the tea leaves. 125g of sourdough (50g of peeled flour, 75g of water), 125g of water (35C), 125g of peeled rye flour "- REPLACED with LEADER plus 325 g of sourdough. (I still don't understand, is there a difference). Everything else is according to the recipe from the author (I just didn't add 30g of flour).
Uploaded to HP. I turned on the pizza test mode. I intended to knead for 7-10 minutes, adding, if necessary (in my opinion), the remaining flour from the recipe.
She solemnly poked the button for the first launch of her new HP. She stood nearby, controlled, so to speak, a bun. It has begun, Hurray! And suddenly .. Kaaaaak will click! I jumped up in fright and pulled the plug from the network. She stood, eyebrows like a house ... I decided in a couple of minutes. Plugged the plug into the outlet. Kaaaaaak will click! Straight out of trouble, some kind of marriage ... I fired all the dough from the bucket into the bowl, mixed it for 5-7 minutes ... I soaped the bucket, I collected all the components, preparing for a visit to the store with a return. The dough, I thought, while it stands, will rise, and then I will decide - in a multicooker oven or in my LG. The husband returned. With my grief, listen, I say (and the day before I read aloud to him about solenoids and their sound from the same site, someone's "debriefing" after purchasing HP). We switched on the same mode. All according to plan. "And what are you going to present to the store?" followed by a question. And then kaaaak will click !!! The reaction is the same - plug from the socket! And also the eyebrows of the house. But ... Having voiced the word "solenoids" plugged the plug back. Another click. And then .. It's clear already. My torment began - should the dough be returned to the HP bucket, if so, should it be kneaded (as they teach on the website, rye dough should be kneaded for a short time). I made up my mind. I put the spatula on, loaded the dough. Inserted a bucket into the HP. Tensed. Doubted. She pushed the dough aside.I removed the scapula. Left to rise as it is. Two hours later, the loaf rose (I didn’t understand how much, I’m not guided with this bucket yet. I thought that it was about twice), and at the same time a piece of dough, previously placed in water in a glass, floated up (I also read it somewhere here). I decided it's time. I turned on baking for 1 hour 10 minutes. That's what happened. Such a long-suffering loaf turned out. It tastes normal, but a little moist, although the crust is the best of all my previous Borodino ones.
I ask the local sages-bakers to explain - is it permissible to replace the ingredients for the dough with an equal amount of leaven (after all, the products are the same!)?
And in what period of life should the sourdough be taken for baking? (Mine was "fed" in the morning, but for my bread today I took it into the dough at about 14.00)?
What else did I violate so rudely that it could affect the result of the moisture content of the finished bread (and even its "low height" - it sagged noticeably from the moment the baking began).
I apologize for the verbosity-cry of the soul, tomorrow (or rather this morning) important guests from afar and for the first time to me (and to our lands too) will come! I wanted to treat, and show that people live there, and they live well, like PEOPLE in general, and not like polar bears ... HELP !!!!
