Yin-Yang Cake

Ingredients

Dough:
Egg 5-6 pcs.
Sugar 180 g
Flour 200 g
Baking powder 1 tsp
Cocoa powder 1.5 tbsp. l.
Cream:
Sour cream 400 g
Sugar 200 g
Interlayer and impregnation:
Pitted cherries 300 g
Sugar 100 g
Alcohol (I have cherry liqueur) 50 g
For decoration:
Chocolate (I have bitter) 20 g
Coconut flakes

Cooking method

  • Dough:
  • Beat the whites, sugar and yolks separately (the number of eggs depends on their size). Add cocoa, baking powder, flour to the whipped yolks and gently stir in the whites. Pour the dough into a mold covered with greased parchment and bake in the oven at 200 degrees for about 40-50 minutes.
  • Cream:
  • Beat the cream of sour cream and sugar (until the sugar grains are completely dissolved). The sour cream I took 26% can be previously discarded in a colander to glass excess liquid.
  • Impregnation:
  • Prepare the syrup for impregnation: add sugar, alcohol to the thawed cherries (along with juice) and heat over low heat until the sugar dissolves, then cool.
  • Assembling the cake:
  • Cut the cake into three parts, soak each one with cherry syrup, then grease it with cream and put the cherry on the cream, do the same with the next level.
  • Grease the top of the cake with cream and decorate with chocolate and coconut.
