Air honey cake (with sour cream)

Ingredients

eggs 4-5 pcs.
honey (artificial) 1 glass
sugar 1 glass
sour cream 1 glass
flour 2.5 cups
ammonium 1 tbsp. l.
cinnamon 1 tsp
vegetable oil 8 Art. l.
walnuts 100g

Cooking method

  • Beat eggs with a mixer. Add sugar and beat until fluffy. Mix all dry ingredients, add sour cream, vegetable oil and stir in (preferably by hand) the eggs. If you beat everything with a mixer, then the dome (as in my photo) cannot be avoided. But I cooked for myself and was in a hurry a little more, so the look is "homey", not for guests.
  • Fry the nuts and chop lightly. pour into the dough and mix gently.
  • Grease a mold (preferably detachable) with vegetable oil (or a non-stick mixture) and pour out the dough. Bake for 45-50 minutes at 160-180 *. Be careful - the honey cake begins to bake pretty quickly from the top and bottom, so it is better to bake a little longer, but at a lower temperature.
  • Such a honey cake turns out to be tender, very airy and a little crumbly. With a spicy aroma of honey and cinnamon. We eat it just like that with tea. If desired, you can cut and smear with cream (better with sour cream - it will set off the sweetness of the dough with sourness).
  • Air honey cake (with sour cream)
  • Bon Appetit!

Note

The honey cake rises very much, so take a form with high sides!

Kava, I want to cook your honey cake, what is ammonium and where to get it
kava
Ammonium is a baking powder. Ammonium salts are colorless crystalline substances that are highly soluble in water and easily decompose when heated with the release of gases (it is due to this that the dough is very airy and not rubbery when baked). Judging by the chemistry, ammonium at 60C should evaporate in the form of ammonia and carbon dioxide without a trace, leaving only water, which will also evaporate during baking.

In our ordinary stores they sell on the shelves where baking powder.

kava, thanks! Very beautiful honey cake! I always associate a honey cake with my grandmother's honey cake (a tear came up). She had it fabulously delicious. Yours is very similar. Thank you.

Yana, just yesterday, went to Velmart (formerly Velyka Kyshenya), on Graviton, and he was there, in the department where vanillin, baking powder, etc. I always take baking powder and van. sugar D. Etker, so this ammonium is also from him.
avgusta24
@lexx ! What color is the bag? I have a baking powder D. Etker, yellowish, but it does not say that it is ammonium.
@lexx
Ammonium, like baking powder, is yellow. I habitually grab a baking powder and then read "Ammonium". Previously, he was not, he appeared recently, she was surprised herself. I think in Caravan, Silpo, Metro - it should also be.
Baking powder is a baking powder, ammonium is ammonium, van. sugar - van. sugar - all three packages are yellow
avgusta24
Then I'll look at Silpo, Velmart is too far away.

We are all waiting for the result using baking powder or soda: girl_love: Will it be also airy?
Kusya
I baked a Honey cake with baking powder ... delicious ... just cut it off and ate some with milk, some with soda ... with cream, I'm sure it will be even tastier. Thank you!
kava
Kusya, thanks for the report! You are a pioneer in using baking powder in this recipe! : hi: Thanks for your experience, I think it is very useful for everyone! Bon Appetit

And at what stage do you add honey? And another question. My honey is almost "sugared", should it be added like this or should it be melted in a steam bath to become liquid?
kava
Add honey to the beaten egg mass. If the honey is thick, it must be melted to a liquid state.
avgusta24
kava ! She could not resist, baked without waiting for an answer, so she melted the honey and added it to the bulk, after sour cream and vegetable oil, then added beaten eggs and at the end - nuts. It turned out sooo tasty. Only baked longer, after 45 minutes. the toothpick was wet, sent to bake, it turned out 65 minutes. Fragrant, tasty, it is cooling down, but we’re already eating a piece. Thank you for the recipe, I’ll bake some more
kava
Well, thank you! Pleased with the result! : yahoo: It's nice when you can share your experience with someone and it turns out to be useful! Enjoy your meal!
