Chinese steamed dumplings (mantou)

Ingredients

Rice flour 150 g
Wheat flour 150 g
Dry yeast 3 g
Water 1 glass

Cooking method

  • It is popular in central China. In the north, it is made only from wheat flour. I like both, although the taste and texture are very different.
  • Sift flour into a bowl. Stir the yeast in warm water. Pour the mixture into flour and knead the dough. You get a bun. Cover with plastic wrap and let stand for 30 minutes. Roll out the sausage and divide into 14 pieces. Form koloboks, place in a steamer pan, cover with a towel and let stand for 15 minutes.
  • Boil water at the bottom of the steamer, place the trays and cook over high heat for 25 minutes. Serve with soy sauce for salads or soups.

The dish is designed for

14 pcs

Time for preparing:

45 min proofing and 25 min cooking

Cooking program:

Double boiler

We must try, interesting and not confusing. And right without salt ?!

Babushka - these mantou are so easy to make
And what is the density of the donut inside? How long do they stay stale or should they be eaten right away?
I have never bought rice flour, I do not know what kind of baked goods it turns out.

I want a saucepan ...

Pampushki interesting, but specific. No salt is added as they are served with salads and soy sauce or soup. Inside, they look a bit like rice dumplings. I would suggest trying without rice flour to start with. Only from wheat. If you like it, you can also go with rice. We sell rice flour in Korean and Chinese stores. It looks a bit like starch and is heavy in weight. The bamboo steamer was brought from China. I like to cook in it ...
Caprice
We sell such bamboo steamers. But, in my opinion, an ordinary steamer is much more hygienic, it is better to wash it.
Babushka
I have a Tefal electric steamer, but I cook Chinese dishes in bamboo. I like it that way. So I'll scrape mine ...

In a multicooker for a couple, you can probably also.

We have a problem with banana leaves. But I would like to ... I sometimes put squares of baking paper under the donuts. It is the individual squares so that the steam passes freely.

Tanya! Thanks for the recipe! I have to try to do this in Oliver. If you add salt to the dough? Will it work?
And I have never seen such steamers. She is just beautifully exotic!
Babushka
Shine,I think Oliver's steamer will be great! About salt - I'm not sure. Not once, and in China too, did I eat greasy donuts. They are usually bland and served with something spicy: meat, sauce ..

And I brought this steamer from China. Although I have an electric Tefal ..

One of these days I will do it! I will try with and without salt. I am very interested in the taste of these donuts! And I will report!
Babushka
Sveta, good luck!

Chinese steamed dumplings (mantou)

Very tasty. I cooked without salt, I don't even feel its absence.
And I made rice flour from rice - I ground it on a coffee grinder.

Wow, I have never seen such a mantou in our village in a Chinese restaurant. Need to try.
I liked the photo very much, so everything is in Chinese - a steamer, a teapot, a mug. Very aesthetically pleasing.
Babushka
Babovka, I'm very glad that I liked it! I cook these donuts very often.

Bridge, Natasha, thanks for stopping by! Recently I have been using these donuts with soy sauce, to which I add a lot of fresh cilantro. It turns out such a Sino-Korean mix ...

ABOUT! I love these donuts! And in soy sauce with green cilantro I also add twisted red pepper with garlic, the one that is used for dressing chimchi.
Babushka! How beautiful you are!
Babushka
