Almond pie with apple and pumpkin filling

Ingredients

Dough:
almond 220 g
light honey 100 g
butter 100 g
eggs 3 pcs
powdered sugar 75 g
flour 50 g
corn starch 25 g
baking powder 1 tsp
juice and zest of half a lemon
Filling:
pumpkin 200 g
apples (large) 2 pcs
light raisins 50 g
rum 2 tbsp
butter 20 g
For sprinkling:
pumpkin seeds (optional) 30-50 g
powdered sugar 2 h l

Cooking method

  • 1. Peel the pumpkin and apples, cut into cubes (leave half of the apple) and fry in butter for three minutes. Add raisins, pour in rum, increase heat to high and let the liquid evaporate. It will take a couple of minutes. Transfer the filling to a sieve and let cool completely.
  • 2. Peel the almonds, grind them into very fine crumbs. Combine with honey, zest and lemon juice and, adding proteins one by one, beat until smooth (it is very convenient and quick to do this with an immersion blender).
  • 3. Mix flour with starch and baking powder. Beat the softened butter with powdered sugar, add the yolks one at a time (without stopping beating), then add the almond mass in several steps, continuing to beat at medium speed. Then add flour and stir until smooth.

  • 4. Put three quarters of the dough into a mold, distribute thin slices of the remaining apple (they will not let the rather heavy filling "sink" in the dough). Then spread the filling, remaining dough and sprinkle with pumpkin seeds.

  • 5. Put in an oven preheated to 180C and bake for about twenty minutes, then lower the temperature to 160C and bring the cake to readiness (in my oven it is about 30 minutes).
