Japanese New Year salad with daikon and carrots

Ingredients

daikon 300 g
carrot 1 PC.
egg 2 pcs.
onions (preferably blue) 1 PC.
garlic 2 teeth
vegetable oil 5 tbsp. l
apple or rice vinegar 5 tbsp. l
salt
sugar 2 tsp
soy sauce 1 tbsp. l
sour cream 1 tbsp. l
sweet paprika

Cooking method

  • The most popular holiday in Japan is New Year. For this holiday, the Japanese prepare traditional dishes with special power. Daikon and carrot salad are an integral part of the New Year's table, symbolizing health and longevity.
  • So, peel the daikon, carrots and garlic.
  • Rub the daikon on a coarse grater. Prepare the marinade: dilute the vinegar with water in equal proportions, add sugar, salt to taste. Pour the daikon with marinade and let it stand for an hour or two, so that the smell and bitterness go away. Grate the carrots.
  • Boil the eggs and cut randomly. They will soften the sharpness of the salad and will harmonize well with the colors of the main ingredients.
  • Cut the onion into rings (I cut it into thin half rings) and pour the marinade for 20 minutes to remove the bitterness. Chop the garlic last.
  • Prepare salad dressing: mix vegetable oil with a spoonful of sour cream, add soy sauce, paprika.
  • Squeeze the daikon, mix with carrots, eggs, onions and garlic, pour over the dressing. Serve individually.
