Ingredients

Cakes:
Wheat flour 300 g
Whole grain wheat flour 120 g
Eggs 4 things.
Vegetable oil 60 ml
Brown sugar 120 g
Light honey 400 g
Strong coffee 250 ml
Baking powder 1.5 tsp.
Fresh ginger root (grated) 2 tsp
Candied ginger (candied fruit) 100 g
Raisins 50 g
Walnuts 50 g
Cinnamon 1 tsp
Cloves (ground) 2-3 pcs.
Pink pepper (ground) 6-7 pcs.
Cream:
Cream 10% fat 500 ml
Eggs (large) 3 pcs.
Corn starch 75 g
Powdered sugar 1 tbsp.
Butter 300 g
Sugar 250 g
Impregnation:
Rum 30 ml
Sugar 2 tbsp. l.

Cooking method

  • Cakes:
  • 1. Mix both flours with baking powder, ground spices and grated ginger. Grind nuts, cut candied ginger into cubes and mix with raisins.
  • Cake striped
  • 2. Make coffee, combine it with honey and heat up to 65 C. Beat eggs with sugar, gradually pour in the honey-coffee mixture, then add vegetable oil. Beat everything well together and gradually add flour, without stopping beating. At first the mixture will be very thin, but by the end of the whisk it will thicken slightly, although it will remain "pouring". Add nuts, raisins, ginger to the finished dough and mix until smooth. Pour the dough into a mold (diameter 26 cm) and bake in an oven preheated to 180C for 60-80 minutes (until a dry skewer).
  • 3. Cool the finished cake on a wire rack and cut into three parts.
  • Cream:
  • 1. Beat eggs lightly with a whisk, combine with cornstarch, pour in 200 ml of cream and stir until smooth. Boil the remaining milk with sugar, pour a thin stream into the egg mixture, stirring vigorously. Warm up the resulting mixture with constant stirring over medium heat until thickened. Try to avoid clumping while doing this. If this does happen, then everything can be easily corrected using a hand blender. Cool the thickened mixture to room temperature.

  • 2. Beat butter with powdered sugar in a fluffy mass and gradually, one tablespoon, add the custard. Drive in at maximum speed.

  • Soak the cakes with rum syrup, coat with cream and decorate as desired.

This cake is a modern reconstruction of my grandmother's recipe. She baked it only for the New Year holidays and how she got the necessary ingredients will remain her secret, and of course, everything was whipped then with a simple whisk. I have not preserved the exact recipe, I picked up a lot anew, but the name remained the same, from childhood. I decided to bring this recipe to your attention, do not judge strictly.
