Medieval oriental pie

Ingredients

whole wheat flour 150 g
wheat flour 100 g
eggs 4 things
butter 200 g
milk 100 ml
sugar 150 g
zest from one lime + 1 tablespoon juice
fresh ginger root (grated) 1 cm
candied ginger (candied fruit) 30-50 g
baking powder 2 h l
flour 50 g
sugar 50 g
butter 30 g
sesame 2 tbsp
peanuts (coarsely ground) 2 tbsp
almonds (coarsely ground) 2 tbsp
sugar to beat the remaining proteins 2 tbsp
powdered sugar 1 tbsp

Cooking method

  • 1. For sprinkling: 50g flour + 50g sugar + 30g butter, rub into crumbs with your hands, mix with ground nuts and sesame seeds.
  • 2. Melt the butter, add milk to it and cool to room temperature. Combine two types of flour and mix with baking powder. Grate the ginger root and remove the zest from the lime.
  • 3. Beat two eggs and two yolks with sugar until fluffy. Beat for at least five minutes, until the volume increases 4-5 times and the consistency of thick sour cream. Without stopping whipping, add about half of the flour in several steps. Then gradually stir in the mixture of butter and milk in a thin stream and add the remaining flour. Add lime zest and juice, grated ginger and candied ginger to the dough, stir and pour into a dish lined with baking paper.
  • 4. Beat the remaining whites with two tablespoons of sugar until smooth and spread over the surface of the dough. Sprinkle with nut crumbs and place in an oven preheated to 180 degrees. Bake for about 45-50 minutes, until skewered dry. Sprinkle the finished cake generously with powdered sugar.

Note

A very aromatic pie with a creamy texture and a crispy nut crust. Despite the presence of whole grain flour in the dough, it turns out to be very fluffy and tender, melting in the mouth. Preparing quickly and not difficult.
