The family liked the pancakes so much that I decided to do more today - the guests ate that call clean. It's boring to cook the same thing twice in a row, so I slightly modified the recipe (forgive me, the author!).
I took again a double rate from the recipe, added 1/2 cup of sugar and a pack (200 g) of cottage cheese to the dough. So that it was not thick, she splashed over another 100 ml of milk. When kneading, I realized that I had added a lot of milk, so I added 4 more tbsp. l. flour. Achieved consistency "like the first time." Judging by the howls of the mixer, I achieved that density of the dough, but to the "touch" it was different ... Well, it doesn't matter. I did everything in the evening, so I don't have a "cold dough" option here.
The dough came up 2 times in just an hour and a half. At this point, I was not at all ready to stand by the pans, so I resolutely mixed everything to zero and set it to rise again. The second approach was ready in an hour, and the pans took their place on the stove.
The dough was ... with what to compare .. it was like a soufflé - the most tender. Not liquid, dense, but airy-airy. I think I screwed up the first pancakes - it turned out that such a dough does not like small volumes, the pancakes are flat and boring. But when I began to put 2 tablespoons of dough on 1 cake ... then both the forms and the volumes went. Of course, I can't compare with those "pigs" that I got according to the original recipe, it didn't work out with such plump cottage cheese, I'll try to make the dough even thicker next time. But the main thing here is that I really wanted to try - and it worked. Delicate, juicy, very airy pancakes with a distinct taste of sweet cottage cheese. Bravissimo to the author, because I honestly rummaged through the Internet today, thinking to find a recipe more suitable for the experiment, but still returned to the tried one - and it did not disappoint! I will definitely try the recipe more than once, including with the "cold dough". A jar of stewed apple slices has already been prepared, it will go next time instead of cottage cheese, or maybe with it

The pancakes turned out to be simply gorgeous, you can't find other words, so, alas, I can't put all the photos out. I set up a small experiment, added whole grain flour (about 70 years left) - the color of the dough is unusual, but the taste - wow!
My husband and I are alone, so half the test is left. What do you think - will it live until tomorrow in the refrigerator (I have a department with a temperature of 0 + 1 degrees) - will it not peroxide?

I still decided to experiment and leave the dough in the refrigerator. So, I report. In a day, the dough did not sour and the next day the pancakes turned out to be just as tasty. Probably at zero temperature the yeast hibernates and no longer works.

Carmona, I'm so sorry. Something I didn't understand, is the yeast dry or pressed? Since the dough didn't rise at all, it's not about the consistency. Vanillin is definitely not a hindrance to yeast.

Maybe this is no longer relevant, but I'll write, I also fried these pancakes with dry yeast (I practiced at the dacha, I don't keep fresh ones) during the night, the dough in the refrigerator practically did not rise, I put it out in the morning, it warmed up and "played", pancakes turned out as always, But for myself I concluded that dry yeast is not suitable for cold dough.

I bake pancakes according to this recipe quite often, but today I decided to experiment and before baking I added 1 glass of warm milk to the dough (+1 tbsp. L of sugar in the dough when kneading). As a result, I have got excellent thin yeast pancakes!
Only one thing is bad - there were about 10 pancakes, they were crushed in one sitting. Not a single pancake survived to the photo session.

The pancakes turned out to be full of holes, but they cannot be called delicate. Probably, after adding milk, it was necessary to leave the dough for an hour at room temperature and let it rise.
