Milk 100 ml

Cooking method

  • Of course, it is easier to buy fish fillets in a store, BUT, firstly, we are not looking for simple ways, and, secondly, well, how can a freshly caught fish compare with a purchased frozen fillet. So ... we clean the fish (I had 1.5 kg pike perch, 1 kg catfish and three 0.5-1 kg burbot). We boil it or steam it (1. this way it is easier to clean it later, 2. no further prolonged heat treatment is required, and 3. the cutlets are very tender). Until ready. I cooked for 30 minutes in a slow cooker. Let it cool down (I generally left it outside overnight / refrigerator temperature /, and made cutlets the next day).
