Lard sandwich - 2

Ingredients

The undercall is fat 300 g
Apple 1 small, it is possible without it
Shallot 5 pcs, I took an ordinary small
Garlic 1-2 teeth
Rosemary small twig

Cooking method

  • Chop the rest of the onion finely
  • Peel the apples and cut into very thin slices
  • When the pieces of the paddle take a golden color, drain some of the fat into a bowl, leave a little at the bottom with the cracklings.
  • Remove the onion, rosemary, bay leaf, and add the rest of the finely chopped onions, garlic and apples.
  • Stirring occasionally, keep on the fire until apples and onions are golden brown.
  • Season with salt and pepper. Gently with salt, it does not dissolve in fat, it sinks to the bottom and after cooling, this spread may be oversalted.
  • Remove from heat, remove garlic and mix with the rest of the fat, pour into a clean bowl.
  • Cool, cover and refrigerate.

Note

PS Apples can be excluded. You can choose the garlic and spices to your taste, I also added a little spice for the meat. Onions in their husks are used to give a golden color.
