Ingredients

zucchini
eggplant
Sweet pepper
apples
bulb onions
salt

Cooking method

Peel the zucchini, eggplant, apples, core the apples, peel the peppers and cut them in half. Put the vegetables in a baking bag and put them in the oven (180 degrees) for one hour. Cool slightly, remove the peel from the peppers. Drain the juice, grind the vegetables with a blender, add salt to taste. Pour the mixture onto marshmallow trays and dry in an electric dryer. Dried sheets can be cut into strips or ground.
Note

To restore, fill the dried strips with boiled water, let them swell, add vegetable oil, garlic, spices, lemon juice to taste. Stir, you can walk with a blender for uniformity. We get delicious vegetable caviar. Bon Appetit!

This is really great! You can always restore as much as you need and nothing will deteriorate and do not lie. This year I made caviar from squash. I use Isidri dryer. It turned out, and very tasty. And earlier, in cans with the addition of acid, the taste was suspicious with sourness and, therefore, caviar was often thrown away. Thanks for the recipe. A very interesting (for me personally) idea to bake vegetables in a bag in the oven. I usually cook on the stove in a saucepan. Not bad either, but your way is SUPER!

: hi: Ariet I wonder how you store dried vegetable caviar. When I made it with a small amount of vegetable oil and restored it after 1.5 months, I didn't really like the taste. As if the oil was slightly suffocated.

Lungwort, what a pity. I do it without oil, but store it in a regular glass jar. The oil can really turn rancid, I add it when recovering.
