And scroll all this splendor right with the skin in a meat grinder with a fine grid. Then there salt, black pepper, garlic. Who loves - greenfinches. Mix everything well. You can already use it.
I put such lard in a flat container, it is more convenient to take from it with a knife, I store it in the refrigerator. I don't need to keep in the freezer, I do it a little, always fresh.
An option for guests is to wind small balls from the mass for 1 bite and freeze in the freezer.
The same balls can be rolled in: - black pepper, - red pepper, - finely cut greens. Such a traffic light on a plate!
