I'm lazy, so I have a very simple, easy way to make marshmallows. Moreover, fruits from your garden, which means they are measured in buckets.
Remove the seeds from the apricot, sprinkle it into trays, sprinkle with 3-4 tablespoons of sugar and put in the oven at 70 *
Pastila from apricots, peaches
When the apricots give juice, pour everything into a saucepan, add sugar to taste if desired

I do not bother with whipping with nicknames, I just stir everything with a spoon and pour the mass into pallets, previously covered with baking paper, since I do not have special sheets for marshmallows.
this is a pallet covered with paper
Pastila from apricots, peaches
it is covered with apricot mass

And here is the finished marshmallow

I also took off, wetting the marshmallow from the side of the paper, rolled it into a roll, unrolled it and took it off without problems. Thanks to Svetlana (KSV) for the tip.
Here is my candy rolled into moth jars

Try it, maybe someone will like my method. Here you spend a minimum of effort, I also tried to give a minimum of heat treatment. Everything is very delicious.

In the south, Olenka, in the south!
Come to rest and you have a bucket of apricots.
On the market, they are also not cheap 100 rubles kg, but you can collect as much as you like in forest plantations. Zherdel, wild-growing apricots, taste no worse than apricots. This year my sister's husband brought 2 buckets of poles from the forest plantations every day on a motorcycle. Collected in just 30 minutes.
But we also did not have an apricot for 5 years. According to the law of meanness, as soon as they begin to bloom, or strong rain or wind, they cannot pollinate. They bloom well, but there is no ovary.
Therefore, I try to make blanks for several years.

Lyi I do not understand...
After the oven, when we add sugar, how much to taste? Atleast approximately..
And where do you dry the mixture? In the oven? in an electric dryer? at what temperature?
Please answer, it is very necessary!

Lyi... in which side of the Krasnodar Territory are the forest plantations? far from Rostov?

Satalya! Sorry, I just saw your question. For some reason, no notification was received on this topic. Probably, I was late and you already understood everything yourself. But just in case, I will answer.
Do you have a spoon? Is there a mouth? Try and add to your taste. : D But the first time, when I put it in the oven, sprinkle it at random (like salt). 1-2 times and everything will fall into place, you yourself will understand!
The mixture is dried in an electric dryer, if you have not bought it yet, urgently buy it. Then I put everything in jars with ordinary iron lids.
I just indulged under the capron caps, the moth is taken away. And so it stands for several years without any changes.
Someone else has tried under vacuum containers.

francevna! I live far from Rostov, 60 km from Anapa. But this year we don't have apricots again.
It was just painful to watch in spring, blooming apricots, frost and all the glass flowers. All fell.

Lyi... we, too, have been without apricots for many years. They bloom beautifully, the soul rejoices. And the rain will pass and everything will turn black.

Girls, I read you ... and I am upset (for you) but I am happy (for myself).
In central Ukraine, we also had frosts in April and it was snowing, this year we thought that winter would never end.
But, apparently, the trees did not have time to bloom ... The apricot is like mud ... I just walked through the village and grabbed a couple - along the way ...

I have a huge THANKS for your way of making marshmallows. With an attack like this, an apricot like this year is just a chic way to fight the crop.

Summer resident!
I am glad for you and your harvest. Well, at least you have apricots, it means that they are not frozen everywhere.
And marshmallow goes very well in winter.
francevna
I also have poles, I changed a bucket of cherry plum for a bucket of poles, and I also put 4 buckets of cherry plum in the freezer today. So in the fall there will be something to make marshmallow.

Hello Lyi! Tell me, do you cook marshmallow only on a pallet or on a mesh baking sheet (Dachnik dryer)?

Hello Lyi! Tell me, do you cook marshmallow only on a pallet or on a mesh baking sheet (Dachnik dryer)?

Responsible for Lyi The pastille is initially very liquid, and if it is poured onto mesh trays (nets), then it will all be below, on the heating element. Therefore, for the marshmallow you need special. means in the form of solid trays for pastille, parchment paper and so on.

Yes, I've already read this in different topics, it's just that the Summer resident has a pallet in the dryer (it's a solid baking sheet), but there is a mesh one. It seems that the author has a pallet in the picture, but it is not clear for sure The other day we bought this dryer, I still don’t understand its principle of operation, each mesh has a different drying temperature.

Lyi The mesh pallet is covered with paper, everything is shown in her photo.

Do you think plum marshmallow (sweet variety) can be made?

Pastila can be made from almost any fruit, including plums. Somewhere in the recipes, we have already discussed prune marshmallow - but the principle of making marshmallow is one

Thank you, let's get down to business today. A fertile year and imagination is lacking how to preserve such wealth.

Valentine, sorry, only now was able to answer. There were problems with the Internet, after the torrential rains the phone got stuck, and with it the Internet. It seems to be, but intermittent. It's not quite right now, but it's getting better.
Girls, thanks for answering without me.
The Dachnik dryer is wonderful. What is your number, if 4M, then with infrared irradiation, that is, the death of microbes ..
I dry everything on mesh trays, while drying the pastilles I cover them with baking paper. I do not use a deaf pallet, it still stands at the bottom so that there are no leaks. I have to rearrange these mesh trays if I need to dry quickly and I use the maximum drying temperature. If you have time, it is best to dry slowly, then you do not need to change pallets and the color of the pastille is the most beautiful. But I think this is unrealistic for the summer.
Now I bought PTFE Fiberglass of the F-4DE007A brand 3 meters wide 1 meter.I have not tried to spread it on the dryer yet, but I have already cut and baked it on all the baking trays, great! ...
It's here
🔗
It turns out, if you cut it yourself, it is very inexpensive. I still have half the material left. Just in time for the dryer.
Good luck!

Lyi, I have a Summer resident - 2M. Then it turns out that I have only one working pallet - a retractable mesh tray. There is also a removable and solid one. But they are not intended for main drying. And you also distribute heat unevenly in the dryer - that is, it is hotter near the back wall, and cooler near the front one ??? And at what level do you open the lid ?? I made a marshmallow from apricots, but it dried up unevenly, where it was at the back wall, it dried out and broke, and at the front wall the marshmallow was bending.
Valentine
What kind of fiberglass is this and what does it give ?? The first time I've heard

I have a 4M dryer, there is unevenness, but not to such an extent. By stirring during the drying process, everything is normalized. I have 4 mesh pallets and a 5th solid one.

I also took it on trial, but now I am just delighted.
For baking, just great. And baked, and removed, and washed.
I put all the pies with cherries upside down so that they fit better, I do not grease with anything. As they are browned, I simply pull them by the edges and leave them to cool on this fabric. The leaked juice is absorbed into the pies, the pies are removed perfectly, and this fabric is washed once or twice.
I haven't cut it into the dryer yet, but I took one of the sheets for the baking sheet for a sample. Dried melon.

And the passage of infrared rays into the product through the glass cloth will not be disturbed .. ??

I do not know. * JOKINGLY * There's kind of a sense of this fabric in the silicone coating.
While the melon pieces are already dry.

tyts-tyts-tyryts I came with a marshmallow! oooo how I adore her! especially apple in childhood, it seemed to me that there is nothing tastier in the world, and when Alsushka came from her grandmother and brought whole sheets ... ooo Damira-apa was a craftswoman in this area.
I have an apricot one, and there are uncomfortable trays in my dryer! Well, this is a hole inside! while she covered it with paper, she swore all over, there is not enough paper for the entire tray, there is also a hole

And here is the result

Pastila from apricots, peaches

Well here it is

Lyi, druhh, thanks for the inspiration

I carry pluss

And I first stew apricot (halves) on a quiet fire without sugar, it gives juice, I canned it or use it for compote. I throw the apricot into a colander, blender and add sugar, with this method, less sugar is needed, and it dries faster, 8-10 hours maximum.

How thick should the mash layer be? Or how much by weight is about 1 Isidri pallet? I blended 1,200 peaches and put them on a tray in a rather thick layer Now I'm dry, I'm worried
BlackHairedGirl
One pallet of Isidri takes exactly one and a half glasses of mashed potatoes. In the center, at the hole, you need to put it thinner, at the edges I put it flush with the sides of the pallet. Trim with a knife and remove the excess at the center to make it thinner, it dries there the longest.

Yeah, 1200 is a bit too much. It will dry for a week
