Ingredients
Prescription for one 800 arnout
Dough:
flour 2 grade 125g
warm water 250g
fresh yeast 2.5g
fermentation for 4 hours 10 minutes at 30C.
Dough:
flour 2 grade 350g
salt 7.5g
warm water (or how much flour it takes to get a soft dough) 125g
Cooking method

Let the dough ferment for 40 minutes, knead for 1 minute and leave to ferment for 20 minutes. Round off twice with an intermediate proofing between roundings, carefully squeezing out gas bubbles and tightening the gluten. Roll the balls of dough in flour and place on the proofer with the tail up for 45-60 minutes.
