The youngest could not sleep, he went to the toilet, and for some reason he found some cheese, and immediately turned out to be wildly hungry: "Mom! I'm very hungry!"
And from my tiny apple, the filling was enough for only 2 buns. But then I sort of got used to my stuffing, won, but there are also a lot of defective copies. Plus, by all the time it was no longer possible to wait for the proofing of the buns themselves until they doubled, they did less proofing.

The truth was not adapted specifically to this recipe, but the one to which you gave me a link - "Bread on custard (oven)". Here is something yesterday in panting I did not make out that this is not exactly the same dough, because everything in buns it contains even more moisture if you count it in proportions relative to flour. I thought it was the same dough, but just more weight in the bread, and in order not to count it I took it. And it is certainly not quite true, but very good. seem to be. Therefore, I report on it
So, sourdough dough for Custard Bread :

Dough:
Wheat sourdough (I have a thick Kalvela) 50 g
The water is warm (so that the process started faster) 210 g
Flour high grade 210 g
I mixed everything in HP and left until active bubbling (about 2-2.5 hours)

Cream brewed, as described in the recipe, but took 2 yolks:
milk 125 ml
flour 25 g
yolk 2 pcs.
sugar 50 g

Dough:
Dough - all
Cooled cream - all
Sugar - I wanted another tablespoon (as you like)
Salt - 8 g, as in the recipe (but I think you can get by with 5 g)
Flour - 250 g (but then I still mixed 40 grams, maybe in vain, but it seemed to me that everything was floating, in the end everything was OK and the dough turned out to be quite soft)

I kneaded the dough and left it to rise for 2.5 hours. Ideally, it was 3 hours. but it was already midnight, and still sculpt and wait for proofing.
It is a pity that it was necessary to get up to work and did not allow the rolls on the baking sheet to distance to the end, they would have been even more magnificent then. But then I would not understand when I lay down. And it got me to do them at night, it happens!
