Ingredients

Eggs 4 things
Sugar 220 g
Vanilla sugar 1.5 bags (15 g)
Salt 1 pinch
Dark rum 2 tbsp. l.
Lemon 1.5 pcs
Showering oil 220 g
Fine wheat flour 450 g
Baking powder (baking powder) 3.5 tsp
Raisins 100 g
Candied fruit 100 g

Cooking method

  • Beat eggs, sugar, vanilla sugar and salt in a bowl (for 5 minutes).
  • I poured the prepared mixture into a bucket.
  • Instead of dark rum, I added cognac (what was at home), lemon juice and zest, softened butter, finely ground wheat flour and baking powder.
  • I put the bucket in the bread maker.
  • I chose program 14, cupcake weight 1000 and a light crust, pressed "start".
  • After the sound signal, I added raisins and candied fruits (as them I took dried pears and peaches cut into cubes).
  • After the end of baking, the top crust seemed soft to me and I left the cake for 15 minutes in the bread maker until it dried out.
  • Here's a beauty turned out.

Note

Divine Cupcake! You can experiment with candied fruits, I think that next time I will cut dried apricots. The cupcake has one big drawback - it eats quickly!

Delicious cake, only I immediately reduced the amount of sugar by 20g. and it turned out all the same sugary, did not put the lemon and did not add rum (brandy), but it was very tasty all the same. I don't understand why the topics about cupcakes are not as popular as about bread, cakes and pies.

And in vain they didn't put lemon and rum (cognac)! The cupcake wouldn't seem sugary. I also only remembered it today, I need to bake it for the coming weekend.

please tell me, and how many grams is 1.5 bags of van sugar? lemon just for the zest? and can you have the details of the cupcake - knead one? how many mines? proofing? or just baked goods? I have a different hp but with a manual mode - so you can repeat it!

Anya, I no longer have those vanilla sugar bags. One package contained about 1 tsp. Sometimes I just put vanillin 0.5-1g (according to my mood). Remove the zest from the lemons and squeeze the juice there. Cupcake program: per weight 1000g - 1 hour all the time. 25 minutes, including 15 minutes kneading, 1 hour. 10 minutes baking, 5 minutes after starting kneading add additives. There is also a function of keeping warm for an hour, but I do not use it, and so it is baked.
There is a note in the recipe: if you prefer a well-baked cake, you can leave it in the bread maker for an additional 10 minutes at the end of the program before removing it from the container.

Interesting information: "We owe this cake to the British, it was created for sailors who traded with India. The cake is a complete food product, which includes eggs, flour, fat and sugar, it can be stored for a long time thanks to rum, in which candied fruits are pickled. "

maybe there was a stove in the draft, but now the windows are open in summer. Well, I somehow baked in the same way with the window open and the breeze was blowing, my dough, too, did not work out the same as always, though I baked bread

Yesterday I baked it in my HP, the "cupcake" program was not enough for me, the middle of the cake remained unbaked. Included extra baking and baked until dry skewer. It turned out very tasty and aromatic.

Yes, I read that the same HP model bakes differently. Why they are mounted like that, I don't know. For example, according to their recipes, I didn’t get a curd pastry the first time around, but there may have been a typo, I had to adjust the amount of yeast. Here is the same rake! I also have moulinex, and I also bake cupcakes for 40 minutes! yeast dough bakes normally, but with baking powder plus 40 minutes! Something here, I think, is in the peculiarities of the test, probably on chemical drozzi it is denser and it needs a higher temperature ...

Irina, I would never have believed that here is an English cake ... with its technology and in the Bread Maker.
My oven is not the same as yours ....therefore I abandoned your recipe, but I did the beating of eggs and further kneading with flour and raisins on my own. I put a lush mass in a bucket and put it on the BAKING program. In principle, now you can bake any recipe for a cake. Everything worked out. Tasty, rum, lemon and vanilla are not superfluous.

Unfortunately, I cannot answer your question, because I don’t know what programs are in this stove. Above, I described the program on my stove, if you pick up a similar one in time, it may work out. For the sample, I made half as much, that is, I divided all the ingredients by 2. But it still turned out delicious.

All these variations on the theme are quite acceptable, because they do not change the main composition of the product. For example, I used cognac instead of rum.
