Kotina, Tina, glad you liked it. What doesn't work with photos?

Kotina
No, it doesn't work. I'll try tomorrow from a computer
Omela
Are you from the tablet? Then I don't know how, the girls wrote that it was somehow different there.

Mistletoe, these are not rolls - this is a MIRACLE! It's just that the head off and the waist expands by a dozen centimeters, you can't get off with one - eat a few. We liked it very much. I replaced the cream with butter and milk. Perfectly molded, perfectly spaced and superbly baked. Thank you. I'll take it to the catalog!

I have a medium baking sheet - 2 cm. Will it leak or can I use it? Can you put parchment (baking paper) on the bottom of the baking sheet?
Arka
Sure you may. And you can also increase the sides of the baking sheet with paper, and be sure that nothing will leak anywhere.
Nastasya78
Thank you very much! I'm already making buns ;-)

Oh, my sugar in the filling has dissolved and ran away to the bottom of the cup with syrup ... Maybe I should have added starch to the filling? It's just that the author kept silent about it ... And I'm not quite an experienced baker yet ...

And whip the cream to what consistency?

How did the author get such a light color scheme? After 20 minutes, the rolls took on the appearance of ready-made, very ruddy, although the cream was still boiling at the bottom. I had to cover it with foil ... There are still 20 difficult minutes of waiting ahead ... Will it burn? Not baked? I bake without convection at 200 C on the recommendation of the author, the level is slightly below average ...

I made holes in the foil for steam to escape ...

She removed the foil. As a result, the liquid in the center did not drip out despite the holes. She put the baking sheet on the very bottom of the oven, baked for another 7-8 minutes.

Cool down, I'll try a little later, I'll report back. Maybe someone will share some practical advice?

Got it out. And the top of the buns is oak ... But something tells me that baking has failed today ...

I looked at Chuchelka's rolls in cream. There, at 180 C, it was enough to bake for 30 minutes. I obviously overexposed the buns. How can I avoid heavy browning and still achieve complete evaporation of the cream?

I understand that those 7 minutes at the very bottom of the oven were unnecessary. Next time I will try to bake at 180 C at a level slightly below average for 30 - 40 minutes. But 40 minutes is the maximum! However, how can you avoid heavy browning and evaporation of the cream at the same time?
Arka
I think that when planting buns, you can switch only to the lower heating element or the bottom + convection.
Nastasya78
I thought about it too, but it was too late. I didn't have enough experience ... I threw out half of the buns, those that were extreme ... Burnt out ... But! I will definitely try again, as the ones in the middle are delicious! I will try to bake at 180 C for 15 minutes on the top-bottom mode and 15 minutes on the bottom-only mode.

And if the oven is only on the bottom mode for 30 minutes, will the top turn brown?
Arka
I think yes, since they are tinted so quickly, then the residual t of the upper heating element is enough for them.
Nastasya78
Thank you. Half of the cream remains from the pack. I'll buy a pumpkin, I'll bake it again.

The buns are delicious, the handles, however, the hooks ... (we won't point our fingers :-)

Should we leave the temperature at 200 C or 180?
Omela
Anastasia, good day. I apologize for the delay in answering, did not miss the notification. No starch is needed in the filling. Sugar should dissolve when heated, beat without fanaticism. The exact baking time depends on your oven. If your colors are fast, put 180s for 25-30 minutes.
Nastasya78
Thank you! Everything is there, it remains only to buy a pumpkin ;-)

And the buns are wonderful!
