Whole Wheat Pumpkin Bread

Ingredients

dry yeast 1 tsp (3 g)
wheat flour c. from. or 1 s. 300 g
whole wheat flour 100 g
pumpkin puree 200 g
water 155 g
salt 1.25 tsp (7 g)
sugar 2 tbsp. l (28 g)
vegetable oil (odorless) 30 g

Cooking method

  • Peel the fresh pumpkin, cut into small cubes and steam or microwave (in the latter case, drain the excess water, if any). Purée and cool to room temperature.
  • Mix yeast with flour (leave 2 tablespoons of premium or first grade flour), add pumpkin puree, water, salt, sugar. Knead for 7-8 minutes, add vegetable oil and remaining flour. The dough turns out to be very soft, sticky, but does not smear along the bottom of the bucket of the bread machine under the shoulder blade and along the walls.
  • Place the dough container in a large plastic bag. Tie the ends of the bag. Fermentation in the refrigerator for 10-12 hours.
  • Allow the dough to warm up at room temperature for about an hour and a half before cutting.
  • Dust the table with flour. Put out the dough, knead. Roll out into a layer of 22x50 cm. Roll up into a roll along the long side, transfer to a mold (11x23 cm), covered with baking paper, seam down. Proofing under the foil for an hour and a half.
  • Bake in an oven preheated to 230C (convection 210C) degrees with steam for the first 10 minutes, then lower the temperature to 200C (convection 180C) degrees and bring the bread to readiness. The total baking time for me was 45 minutes.

I just put 25 g of margarine, well, I mixed it up .... maybe that's why the structure is slightly different than in the photo, but it is cut perfectly, without crumbs. My pumpkin was bright orange, and the bread was also very colored!

The pumpkin was sugary sweet, so I limited myself to 1 tbsp. l. sugar, the bread turned out sweetish, but not sugary, with soft cheese just a fabulous taste! Photo in the evening, if it lasts!

Try it this , it works great both in the oven and in the bread maker. Walnuts mask well the whole grain flour in it.
