Ingredients

Starter dough 200g
Warm water 100g
Honey 1 tsp
Pressed yeast 4g
Buckwheat flakes that do not require cooking 80g
Boiling water 200g
Salt 1.5h l.
Wheat flour, premium 290-300g
Pine nuts 30-40g

Cooking method

  • Pour 200 grams of boiling water over buckwheat flakes, add 1.5 tsp. salt and wait until the flakes swell and cool. In 100 grams of warm water, crush 4 grams of fresh yeast and put 1 tsp. honey.
  • Sift flour.
  • Pour the diluted yeast with honey into the bucket, put the swollen soft porridge, put the leavening dough, add the sifted flour. In my HP, this is the order of the bookmarks, and in others, it is laid according to the instructions.
  • Mode - "Whole Grain", size - 900 g, crust - medium.
  • Add nuts at the signal.
  • I baked such bread with walnuts, but I liked it more with pine nuts.
  • I worked out the recipe for Great Lent, but, perhaps, it is suitable for everyday use. With the addition of vegetable oil, the dough will certainly not be so sticky

At first glance, the gingerbread man was a little dry, but we must not rush to add liquid during the first batch, because during the second batch it began to smear along the bottom and had to help the nuts to be mixed with a spatula. After the last boning, smooth the dough with a hand moistened with water. There is no usual kolobok, the dough is sticky, but in spite of this, the roof of the bread does not collapse.
The bread was not very tall, but soft inside, with a crispy crust and a convex roof.
