Wheat bread with apple and dried apricots on sourdough

Ingredients

Rye sourdough (75g water + 75g flour) 150g.
Wheat grains 100g.
Apple 150g.
Wheat flour 230g.
Vegetable oil 1h l.
Salt 1h l.
Syrup 2h l.
Dried apricots (5pcs) 35g.
Boiling water 100g.

Cooking method

  • Pour dried apricots with boiling water, cover and let it brew, mashed with water.
  • Rub the apple on a coarse grater.
  • Grind wheat grains in a coffee grinder:

  • Mix the sourdough with dried apricot puree, grated apple, vegetable oil, molasses. Pour HP into a bucket. Top with flour, crushed wheat grains, salt. Dough program. The gingerbread man is sticky. I do not add flour, as I bake in a mold and want a more perforated crumb.

  • After completing the kneading, turn off the HP and leave the dough for 2 hours. After a while, put the dough on a silicone mat moistened with water with wet hands:

  • With wet hands, stretch into a rectangle and fold three times:

  • And again in half.
  • Transfer to a mold, smooth with wet hands:

  • Cover with a towel and put in a warm place (I have an oven with the light on and a pot of boiling water). Let it increase by 2 times (I have 2.5 hours).
  • Sprinkle with water before baking.
  • Preheat the oven to 200C. Bake for about 20 minutes, then lower the temperature to 190 and bake for another 20 minutes.
  • Sooooo perfumed and delicious bread !!
  • The only thing is, I would add more salt.

Mistletoe, I love your sourdough bread so much. Today I baked this bread too. True, I had to replace the molasses with honey (I have no molasses yet) and there are no wheat grains, I put in whole-grain wheat flour. Everything else is prescription.
