Episode two - tragic
Gan, I will continue to weird.
Yesterday I finally decided to finish off this pie after the first failure. The dough is super-duper in all respects. I fried mushrooms with onions in the filling, I also potted potatoes, and 200 grams of fried turkey mince from the breast.
I did everything in good faith. And set to bake. On a signal, I opened the lid to turn it over, and almost fainted: in my 4-liter saucepan, the pie almost reached the top of an inch by 4. And it rustled when I opened it ... I almost died from joy.
Well, you have to turn it over. I put in a double boiler (it stuck straight to the top of the pie - so tall) and turn it over on it ... I want to take off the saucepan, I feel it, there is no lightness in it. I shook it lightly and take it off - and there - my "roof" is right on the double boiler with all the filling, and in the saucepan, the baked bottom part of the pie with neat deep sides remains. Apparently I made some kind of terrible screams, because the frightened husband ran into the kitchen.
I grabbed from the pan with my hands what could be called an excellent preparation for the "Drunken Cherry" cake, quickly covered the neatly dumped filling with THIS hot miracle cap, put it all on the baking sleeve (otherwise I wouldn't have crammed it into the cartoon) and with it I throw it back into the pan. I switched on the mode again and went to sob ...
Firstly, from pain, because only then did it reach me that I was throwing all this hot stuff with my bare hands, my fingers were already swollen, but more from resentment that I, damn it, so much tra.. suffered, but here was such an ambush ... The result after another 20 minutes was as follows:
Mushroom pie
My tall nut became flat like a bast shoe and all its splendor turned into a flat mass. Here you can even see how high the pie would have been, do you see the edges of the walls wrapped up ?, and everything with the filling fell through and flattened the roof.
My conclusion: since the first part of the baking proceeded with a bang, then everything is in order with the dough and kneading.
I sin 95% on this: When I fried the filling, obviously I had to defend all the oil that remained from the frying, in the sense of throwing it on some kind of sieve, or something. Since the filling was sprawling inside, greasy. Most likely she ruined my dough. And when I also turned it over, it planted the roof with this fat. I have no other option.
BUT ... Delicious, the same infection turned out, but a vidochek ..
Mushroom pie
I will endure all the beatings and rotten tomatoes. Maybe my experience will help someone from mistakes.
But I won't - if I don't repeat it. Only qualitatively.

She did not smear the current, she also tricked me with a bell for the insurance, and it was removed easily with her hands, it did not stick anywhere, it was just that the filling was so heavy and greasy that the poor bottom refused it.
