I will share my observations, maybe someone will need it.
Dough was put on 100 grams of whole grain sourdough. Since the sourdough is not yeast, it doesn’t vomit so quickly from the spot, it made a dough in a ratio of 1/1. 200 g of 1st grade flour and 200 g of water, well, 100 g of sourdough. The amount of ingredients in the dough was counted naturally.
Already added 2/3 teaspoon of saf-instant yeast to the dough.
The sourdough gave the aroma, of course, but the color of the bread also turned gray, as can be seen in the photo. But the result is still fantastic. Crumb, crust, holes ... My husband joked (though not entirely well) - did I add rubber there)))) It can be crumpled, stretched, it is kind of damp, but not sticky, it does not crumble at all! True, you don't need more yeast in this bread, it will hammer in a delicate milk aroma.
And it is also exclusively baked bread. I often bake in the microwave on convection mode, I have already adapted myself to both humidification and temperature. The first time, and this one baked there. The bread turned out to be 4 with a minus, it was clear that he obviously lacked the space and humidity of the oven.
The stone is no longer just in dreams, but is urgently required ... The water had to be removed 10 minutes before the end of baking, otherwise the bottom would not be fried in any way. When cooling down, the bread sat down by 1.5-2 cm in the area of ​​the bottom, even a fold was formed. If only a stone or a cast-iron frying pan had been used, the bottom would have gotten hot right away.
Well, yes, already during the formation of the loaf, it became clear that it was possible to add a little flour. But the process of kneading and the first two rasings was entrusted to the bread maker, I was not even at home ...
