Sweet and sour Jewish bread (oven)

Ingredients

Wheat dough
Fresh yeast 15 g +1 egg + whey (lukewarm) = up to 150 ml.
Sugar 15 g
Wheat flour 200 g
Rye dough
Serum (lukewarm) 150 ml
Olive oil 30 ml
Rye flour 250 g
Salt 15 g
Caraway 10 g
For lubrication:
Egg 1 PC.

Cooking method

  • Knead the wheat dough. I kneaded in a combine. Leave to rise for 30 minutes. If in HP, then turn off the stove after mixing.

  • At this time, knead the rye dough in a plate. (butter + whey + salt + flour). I kneaded with my hands. Roll the dough into a ball and cover with a towel.



  • Knead the wheat dough. If knead in HP, turn on the "Pelmeni" mode (the dough will be quite steep). Gradually add the rye dough in pieces. Knead well. Leave until doubled.

  • Crumple. Once again, turn on the HP for kneading and mix in the caraway seeds (leave a little for sprinkling).

  • Place the dough on the table and form a loaf. Leave until doubled. I put in the oven with the light on + a thermoserver with hot water. This is what the dough looked like before the last proofing:

  • Brush with egg and sprinkle with caraway seeds before baking.

  • Bake in a preheated oven 200C - 10 minutes, 180C-15 minutes, 160C - until tender.

For the sake of the purity of the experiment without "sacred meaning" !! Dough, rise, proofing, baking. Already during the mixing, 2 tbsp had to be added. l. whey - the dough did not want to collect in a bun. And all the same, the consistency turned out to be more dense. The size of the finished bread is also slightly smaller than the first one:
