Ingredients

Flour 2.5 Art.
Sugar 2 tbsp.
Butter 150 g
Egg 5 pieces.
Cottage cheese 500 g
Sour cream 150 g
Vanilla
Baking powder 1/3 tsp

Cooking method

  • Curd biscuit
  • Oil, 1 tbsp. sugar, 3 eggs, salt, sour cream, grind until smooth. Add 2 tbsp. flour, baking powder and knead the dough. It should be like thick sour cream. Mix cottage cheese, sugar, eggs, vanilla and 0.5 tbsp. flour. Gently stirring, combine the dough with the curd mass.
  • Put the dough on a greased baking dish, smooth it into shape and bake until tender.
  • The finished biscuit can be cut into cakes and soaked in any cream or jam ...

Italian cheese cake

For the recipe you will need:

cream cheese (mascarpone can be used) - 450g
sour cream (fat) - 450g
ricotta cheese - 450g
egg - 4 pcs.
butter (melted) - 110g
flour - 3 tbsp. l.
starch - 3 tbsp. l.
sugar - 1.5 cups
vanilla - 1 tbsp. l.
lemon (juice) - 1 tbsp. l.

Place foil on the bottom and sides of the split mold with a diameter of 30 cm. Grease the mold with oil. Preheat oven to 180 degrees.

In a large bowl, combine the cheese and sour cream and beat until creamy. Add eggs one at a time, stirring well after each addition. Add melted butter. Combine flour, starch, sugar and add to the cheese mass along with vanilla and lemon juice. Mix well.

Bake for 1 1/2 hours, turn off the oven and leave the cake in it for another 1 hour. Put the cake in the refrigerator overnight, sprinkle with powdered sugar and serve.

I just have an idea that this is not a very simple recipe, probably it has no analogues available.
Several years ago, the Frenchman Denis, the pastry chef of the hotel where I then worked, demanded a commendable certificate from the president's security service to the effect that he had made such a pie for some occasion. And he got it. I can say for sure that it was not in vain, because I tasted a fragment of his creation, and was very impressed.

Mascarpone cheese and Ricotta cheese are sold in large stores. I took them to the Metro. They are quite expensive. I don't remember the price of Ricotta, but Mascarpone is a little over 300 rubles per 500 grams. Mascarpone should be used all at once. After opening the package, its shelf life is reduced to 4 days, if I'm not mistaken

mascarpone is fermented cream, not cheese at all. And there is cream cheese in stores called Philadelphia or Almette. Probably seen.Instead of ricotta, you can safely take any fatty non-grained cottage cheese, and it is better to rub it through a sieve. It does not differ in any special taste. Well, maybe less acidic and spoil faster.
