Lemon gingerbread

Ingredients

Wheat flour 600 g
Sugar 250 g
Margarine 150 g
Egg 1 PC.
Honey 250 g
Cocoa 25 g
Baking powder 1 tsp
Rum 1.5 tbsp. l.
Cinnamon, cardamom, cloves, ginger, anise by a pinch
Zest of 0.5 orange and 0.5 lemon
Vanilla

Cooking method

  • 1. Put honey, sugar, margarine on the stove until the sugar is completely dissolved. Do not boil !!! Remove from stove and cool slightly.
  • 2. Mix flour with spices, baking powder, zest, cocoa.
  • 3. Introduce the egg mixed until smooth into the warm mass. Add rum or cognac or flavor.
  • 4. Gradually pour the flour and spices into the honey-egg mixture in parts and knead the dough very well. The dough won't be as thick as you'd like, but you don't need to add more flour.
  • Put the dough in a bag and refrigerate overnight. The next day, knead the dough again, and if you feel that it should be stronger, add a little more flour, no more than 50 grams ... The time depends on the thickness of the gingerbread, as soon as it is browned, your gingerbread is ready.
