Well, to be honest, I don’t do anything special. The waffle iron, of course, is washed after each use, but without fanaticism. I never try to strip everything to bare metal. It's like the hotly debated layer of fat (one might say carbon deposits) in old and cast iron pans. It is desirable to save. I think if you try hard to peel off all this fatty film, then over time the waffles can begin to stick to the surfaces and tear when you open the waffle iron, which, of course, you really don't want.
My waffle iron doesn't smoke at all when baking. When the waffle is fried, the fat naturally comes out, but remains within the platinum range. I try not to make huge waffles all over the surface. Therefore, no fat is poured between the plates. The device can smoke if the fat gets inside. Try not to let this happen.
And my waffle iron is very simple. When the last waffle is baked, I turn off the appliance and immediately wipe it hot with a damp sponge, collecting the remaining fat. If there is a lot of fat, then you can drop a tiny drop of liquid detergent, but then you will have to very carefully wash the panels from the detergent many times.
