First I sank the chocolate there, when it went limp - I took off the lid, and with continued puffing I stirred and poured in condensed milk and poured in everything else (this time with a filling - a handful of mercilessly broken roasted hazelnuts and all the same toasted oatmeal. Pros - no need to steam (crap) on the topic of sewing and instant thickening, the consistency is much more uniform. And to evaporate, we still do not evaporate anything according to the original version (that is, the water bath just rolls normally). I put it on the molds right from there, not turning it off, respectively, until the last drop had the same initial consistency. Minuses - if the shape is unsuccessful, that is, there is a risk of sticking a paw under the steam, but I have a fairly wide container for rice from the old tefalka, and it has just such a shape that I can pick out and it is convenient to stir. By time - it depends on the steamer, if the steam is quickly injected, then you can keep within 10 minutes. It takes longer to lay out than to heat-stir ...

I just remembered how I was heating wax on candles under NG in a double boiler, and decided that chocolate was already then - just God himself told me to try it.
