Anti-crisis cake

Ingredients

Dough:
Flour - how much it takes
Salt pinch
Sugar 250 g
Margarine (melt) 250 g
Yolks 5 pieces.
Extinguished soda 1 tbsp. l. vinegar 1 tsp
(no slide)
Cream:
Protein 5 pieces.
Powdered sugar 0.5 - 0.7 tbsp.
Jam 0.7 - 1 tbsp.

Cooking method

  • Dough:
  • 1. Grind the yolks with sugar and salt without much fanaticism, add melted margarine, soda, quenched with vinegar and flour - how much it will take to make a not very tough dough. Divide it into 5 parts.
  • At the beginning of the recipe, I wrote that for 5 cakes - if you want to make the cake taller (6 -10 -20 cakes), add 1 egg per cake (yolk in the dough), 50 g of margarine, 50 g of sugar.
  • 2. On a dry baking sheet, knead each piece of dough into a cake layer: the dough is very fatty, so you won't be able to roll it out. And it's not scary if your "fingers" remain on the test - the cream will hold better. However, you can also smooth it with a glass. You should end up with something like this:

  • 3. Bake each cake until golden brown. The cakes are baked very quickly. Pull the baking sheet out of the oven: here you have to hurry up and continue to act very quickly. Turn the cake over on the table and instantly cut it to fit a pre-prepared template. I use a lid of a suitable size for this. If the cake hardens even a little, you can't cut it beautifully, and it can break. Save the cuttings for sprinkling.
  • Cream:
  • 4. Beat the whites into a strong foam, add 0.5 - 0.7 cups of powdered sugar, beat again, add 0.7 - 1 cup. jam.
  • Why is there such a spread? Depends on the acidity of the jam and your taste. Try the cream and add either sugar or jam to taste.
  • Assembly:
  • 5. Cover each cake with a thick-thick layer of cream and sprinkle with crumbs obtained from crushed scraps.
  • It should be soaked for at least 12 hours.

It seems that I have not found such a recipe. And I came up with the name of the cake myself: occasionally I have been baking this cake for 20 years, but I don’t remember its name.
