Pork Roll

Ingredients

Pork (tenderloin or tenderloin without bone) 1 kg
Butter 2 tbsp. l.
Fennel 1
Garlic 6 teeth
Bay leaves 2 pcs.
Cumin, sea salt, peppercorns

Cooking method

  • Mix a generous pinch of cumin, a handful of sea salt and 10 chopped peppercorns. Roll the pork into a roll and tie it with thread in several places. Dip in a mixture of pepper, salt and cumin.

  • In a heavy skillet (which can then be placed in the oven), melt the butter and fry the pork on both sides until golden brown.

  • Add garlic, thinly chopped fennel and bay leaves. Cover and bake the pork for about 1.5 hours in an oven preheated to 180 C.

  • Let the pork stand for about 20 minutes before slicing into portions. You can serve with boiled
