Eggplant rolls with nut filling

Ingredients

Eggplant 1 kg
Walnuts 1,5 st
Imeritinsky saffron 0.5h l
Ground coriander 0.5h l
Cilantro greens and basil 0.5st
Wine vinegar or pomegranate juice 2-3 st. l
Garlic 3 cloves
Red hot peppers taste
Salt taste

Cooking method

  • Cut the eggplants lengthwise into slices 0.5 cm thick. Sprinkle with salt and put under pressure for 2-3 hours. Squeeze out the liquid and dry. Fry in vegetable oil.
  • Grind the nuts in a blender together with herbs and garlic, add spices. Grind well into a paste, slowly adding boiled water and vinegar. You can substitute pomegranate juice for vinegar.
  • Grease each eggplant slice generously with nut butter and roll into rolls.
  • You can additionally coat the rolls with nut paste on top. ... Leave for a few hours, or even better overnight in the refrigerator to brew.

Eggplants can not only be fried, but also boiled, or steamed or baked in the oven, that is, prepare a more dietary option.
If the nuts are very dry, and at this time of the year they are often like that, then add a little nut oil by grinding them.

An egg will add more calories .... Some people soak eggplants in salted water to absorb less oil, often boil them ... but fried ones are tastier.
