Kenwood 450 used to have a rare glitch - on manual programs, baked goods for less than 10 minutes were not displayed, even if you set the baking time to 0 - this is sometimes required for some sourdough recipes.

And, as a rule, there is only one scheme:
1. Kneading on any program (usually "pizza" or "dumplings"):
2. Proofing with HP off.
3. Baking on the baking program.

The fact is that the leaven is too unpredictable for even a programmable bread maker to be adapted for it (by the way, the Kenwood you mentioned above is programmable and, therefore, more flexible in the selection of programs than Panasonic).
I experimented with various programs of Panasonic (I have 2501), adjusted it to my sourdough (or sourdough for it)), but in the end I use the scheme I wrote above.
