The bread turns out to be baked, but the crumb is moist and finely porous, we love this more than coarsely porous and dry. This is me about rye bread. Something like that.
The amount of rye flour can even be increased by 40 g, and wheat flour can be reduced by 40 g, and the bread still turns out.
