Oh, and I did the same fish yesterday. Yummy, better than in the store and healthier. A little advice: in order not to burst the skin of the mackerel, you need to grease it several times during cooking with vegetable oil.

I had frozen mackerel .... maybe the skin burst from this, because I always grease with oil before cooking, but really 1 time.

I also have a frozen one (the other is not sold), I grease (like you) first the grate, and then the fish itself a couple of times. The skin breaks because it sticks to the grate. You can add a little turmeric to the marinade, you get a beautiful color, although it does not affect the taste. I don't smear it with liquid smoke, I haven't bought it yet, and it's very tasty.

And I never defrost the fish, I just put it on foil, sprinkle it with seasoning, put chopped onion in half rings, a spoonful of mayonnaise, wrap it up and after 30 minutes at 180-200 degrees the fish turns out to be "lick your fingers".
