Champignons with squid fast

Ingredients

squid (peeled) !!!!!! 400 g
Champignon 300 g
kiwi 1 PC
onion 1 PC
mustard white beans 1 tsp
Bay leaf 5 pieces
dill
garlic 3 cloves
for pickling:
water 70 ml
oil rast 50 ml
vinegar 9% 40 ml
hot red pepper 0.5 h l
sugar 1 tsp
salt 2 h l
black peppercorns 15 pcs

Cooking method

  • We take 2 squid carcasses from the freezer (400 gr), do not defrost! Pour boiling water over and immediately remove a thin film.
  • Then we put them in boiling water EXACTLY for 10 seconds. We cut into rings. The squids are ready to marinate.
  • Wash the mushrooms, pour cold water, put on fire, bring to a boil and boil for 1-2 minutes, depending on the size. We rinse with running water, put it in a colander.
  • In a saucepan, mix all the ingredients for marinating, put on the fire, stirring, until the sugar and salt are completely dissolved. Cool it down.
  • Chop the garlic, kiwi.
  • We put everything in the marinator, release the air, and turn it on for 30 minutes.
  • Champignons with squid fast

Note

I have an automatic marinator, a program for 30 minutes. For the "9 minutes" marinator use 3 cycles = 3 x 9 minutes. If you do not have a marinator, it is best to place it for marinating overnight.
Champignons with squid fast

I added an additional 2 teaspoons of dry carrots. But, IMHO, you can do without it.
As a result, very soft and spicy squids combined with delicate mushrooms.

I really like to cook from squid.Using this technology, squids are tender - suitable for stuffing, pickling and just for salad

Very tender squids turned out. But the mushrooms, I would advise for this recipe to take only small ones in size, since I did not marinate large ones for some reason (they stood for almost a day).
I also added carrots especially for my daughter (she still doesn't eat mushrooms and squids, but she ate carrots with pleasure).
