Persimmon salad with parmesan

Ingredients

1 large persimmon (I took 2 small ones)
a handful of lettuce mixture
2 tbsp. l. grated parmesan
1 tsp pine nuts (put 1 tablespoon)
1 tbsp. l. sherry vinegar (I have apple cider)
1 tbsp. l. olive oil
freshly ground allspice

Cooking method

  • Cut the persimmon into slices. It is better if the persimmon is pitted and hard enough to keep its shape.
  • Place the persimmon slices on a plate. Put lettuce leaves on top, then I made another layer of persimmon.
  • Sprinkle with grated parmesan and pine nuts.
  • Whisk sherry vinegar with olive oil and pepper. Pour the resulting sauce over the salad.

The salad turned out to be very tasty, but next time I will add some dry-cured ham (ham or prosciutto) to it.
