Try it, there will be a very fragrant bread !!! If there is honey, then buckwheat, but if not - any will come off, even added molasses. I have never tried it with sugar. Nothing more from spices !!! Instead of water, I often use water from Indian sea rice, (the sour the better), it even tastes better on it !!! If you want to make a recipe bigger, just multiply by 1.5 all the ingredients and spices, and that's it.
