Risoni with chicken breast and canned tomatoes

Ingredients:

canned peeled tomatoes in their own juice 2 cans (small)
garlic 2 cloves
sugar 1 tsp
oregano 1 tsp
fresh basil 6-8 leaves
olive oil 3-4 tbsp. l.
Risoni
lemon peel 1 tsp
chicken breast 1-2 pcs.

Cooking method

  • We take two cans of canned peeled tomatoes in our own juice (if you find sherry - great), pour it along with the juice into a fireproof container.

  • Add:

  • 2 cloves of garlic, finely chopped

  • 1 teaspoon sugar (to balance the acid)

  • lemon zest

  • 1 teaspoon oregano (ideally a few fresh leaves)

  • 6-8 fresh basil leaves, chopped

  • ground pepper to taste,

  • 3-4 tablespoons olive oil

  • if necessary, salt.


  • Mix gently and put in the oven for 10 minutes at 200 degrees C.


  • In parallel, fry the chicken breast in a small amount of olive oil with the addition of oregano, salt and pepper. Fry until golden brown.


  • We take the tomatoes out of the oven, put the meat among them so that it is in the sauce. We put in the oven for another 4-5 minutes.


  • We use Risoni as a side dish.

  • Boil in salted water, drain, rinse under cold water. Pour 2 tablespoons of olive oil into a skillet, add 2 cloves of finely chopped garlic, risoni, oregano and about a quarter cup of finely chopped basil leaves.
