Carrots in mustard oil

Ingredients

3 large carrots
6-7 tbsp mustard oil
1 teaspoon each cumin, coriander and mustard seeds
4 tablespoons madeira or 1 tablespoon wine vinegar

Cooking method

  • Peel and dice the carrots. Pour oil into a pan, add spices and heat well over medium heat, put carrots and simmer under a lid for 10-15 minutes. Pour in wine and simmer under the lid until the carrots are semi-soft and the wine has evaporated. Add a little heat and fry the carrots until they are pleasantly golden without the lid.
  • Put the finished carrots in a salad bowl and, if desired, add a little salt.
  • Such carrots can be served as a side dish with white fish, as a warm salad with croutons or fresh vegetables, as an appetizer if seasoned with hotter vinegar and allowed to cool completely.
