The final mass fraction of moisture in products varies, depending on their type, from 1.5 to 5%.

The dry product retains the taste and smell of milk, in addition, almost all proteins, carbohydrates and minerals, as well as some of the vitamins contained in fresh milk. Whole milk powder also contains fats and vitamins soluble in it.
