Lush kefir pancakes from A. Grechko

Ingredients

Kefir 1 tbsp (250 ml)
Water 1/6 cup (40ml)
Egg 1 PC
Flour 1 1/3 tbsp (300 - 350 ml)
Sugar 3 tbsp. l.
Salt 1/2 tsp without slide
Soda 1/2 tsp without slide
Vegetable oil for frying approx. 3 mm from the bottom of the pan
Butter for greasing pancakes

Cooking method

Grind the egg with sugar and salt.
Heat kefir with water until warm. Add to egg mixture and beat until frothy.
Add flour, stirring with a whisk. Stir thoroughly until the dough is homogeneous. You should get a dough that does not flow, but falls off the spoon in a thick ribbon.
Now the soda is added. Stir the dough thoroughly again with a whisk and fry the pancakes over a low-medium heat. I do not pour oil generously, but grease the pan (gurgle oil from a bottle onto the pan and spread it with a silicone brush). If you pour more oil, then the pancakes grow even more magnificent, like donuts.
After cooking, the pancakes can be greased with butter, but those that are not greased in the photo. I want to add that after adding soda, I mix the dough and do not touch it anymore (I just take it with a spoon as much as I need). Soda puffs up the finished dough very much, and it becomes airy and fluffy. I think that you should not stir it again so that air bubbles remain, which give splendor to the finished products.

Although before that I did not recognize the dough for pancakes with an egg, now I cook only according to this recipe for about six months.

In my family, these pancakes are recognized as the most delicious! When fried, the oil is not absorbed. The pancakes are very porous and soft. When they cool down, they do not fall off and do not harden at all. There is absolutely no soda aftertaste due to its small amount.




OLADI - products made from wheat flour or a mixture of this flour with oatmeal, buckwheat, potato, etc., mixed with milk or water with a large amount of yeast. The dough is thicker in consistency than pancake.

In this recipe, soda is added to the finished dough. After adding baking soda, the dough instantly becomes airy like foam. This is due to the fact that the liquid is sour and warm (the dough is also warm).

The soda is mixed in the dough perfectly. Moreover, I take a spoon from a box of soda which goes into a spoon, and she, you know, comes across with little breasts. So I pour it into the dough.

I have made these pancakes many times, and they always work out equally well.

It turns out very, very tasty if fry pancakes in a mixture of vegetable and ghee. Highly recommend!

And all the time Stella said that the bread smells like yeast and decided to reduce the amount of yeast much (it seems 2 times). That bread rises just as well, but it stopped smelling of yeast. Perhaps the soda in Germany is stronger and can be used less. I do not recommend extinguishing additionally, since soda is already extinguished by the acid of kefir.
