The spoons are ordinary, not measured. I take sugar from a can with a spoon, it turns out with a tiny pea, but put as much as you like.

I bake in a savory version, it turns out great. Sugar then I put 1 tbsp. l. with a tiny pea, because we love sweet dough and salty filling.

Beat the dough with a mixer, whisk for proteins. I noticed the following: the finished dough barely climbs on the legs of the corollas, but not much! ... This makes a superfood pancake. Well, I will note again that if you put a little flour, then the pancakes will be less fluffy and will absorb oil when frying.

Cooking method
Grind the egg with sugar and salt.
Heat kefir with water until warm. Add to egg mixture and beat until frothy.
Add flour, stirring with a whisk. Stir thoroughly until the dough is homogeneous.
You should get a dough that does not flow, but falls off the spoon in a thick ribbon.
Now the soda is added. Stir the dough thoroughly again with a whisk and fry the pancakes over a low-medium heat. I do not pour the oil generously, but grease the pan (gurgle oil from the bottle onto the pan and spread it with a silicone brush). If you pour more oil, then the pancakes grow even more magnificent, like donuts.
After cooking, the pancakes can be greased with butter, but those that are not greased in the photo.
I want to add that after adding soda, I mix the dough and do not touch it anymore (I just take it with a spoon as much as I need). The baking soda puffs up the finished dough very much, and it becomes airy and fluffy. I think that it is not worth stirring it again so that air bubbles remain, which give splendor to the finished product.
