Cupcake Polish Babka

Ingredients

Wheat flour 400 g
Water 30 ml
Vodka 60 ml
Orange juice 30 ml
Salt 1/2 tsp
Sugar 75 g
Soft sl. oil 115 g
Egg 3 pcs.
Saffron 1/2 tsp
Dry yeast 10 ml (2 tsp)
Dried cherries 75 g
Raisins 75 g
Glaze:
like sugar cakes,
lim. juice and protein

Cooking method

  • It means this: there was no vodka in the house, I replaced it with rum. And water for milk. These are all my digressions. Flour added 350 g at first, I thought maybe a lot, then I laid out the remaining 50 g, that is, 400 g, as in the recipe, just right.
  • Steam dried fruits with boiling water for half an hour before, drain the water.
  • Mix butter, sugar, eggs, saffron with a mixer. Add juice, milk, vodka. Add this liquid mixture to the bucket of the bread machine. sifted flour on top, salt in the corner, yeast in the center. Knead the dough, add dried fruits at the signal. The dough turns out to be liquid (there was even an idea to add flour, but I restrained myself), like liquid mashed potatoes, it does not smell like a bun, it is impossible to form products from it. Then put the dough in the mold, let it rise twice (it took me 70 minutes in the warm oven) and bake. First written 20 min at 200aboutC, then reduce to 190 and another 15-20 minutes. But it took me less time. I think it depends on what form your grandmother is in. I did it in the cupcake ring.
  • Then put white glaze on top of the cooled grandmother and sprinkle with something (almonds in the photo in the book). I skipped this stage.

It is written that this is a traditional recipe for Easter in Poland. I decided to try it. I liked it, I decided to share the recipe on the forum.

Very tasty cake, the structure is exactly cupcake, not cake-like. Moderately sweet. I really liked it. As a dough recipe, you can take a note for cakes who prefer muffin cakes. You can add vanillin there.
