Ingredients

Wheat flour 1 kg
Milk 250 ml
Salt 1 tsp
Sugar 400 g
Fresh yeast 80 g
Dark raisins 500 g
Light raisins 300 g
Rum or cognac 40 ml
Grated zest of one lemon and an orange
Cardamom 2 pinches
Butter 700 g
Powdered sugar 200 g
Candied fruit

Cooking method

  • Wash the raisins and add rum or cognac for 8 hours. Chop the yeast and mix with 125 ml. warm milk, 5 tbsp. l. flour 2 tbsp. l. granulated sugar. Put on for 30 minutes. to a warm place. Sift 2/3 of the remaining flour into a large bowl and make a depression in the middle. Put orange and lemon zest, salt, cardamom, 500g around the edges. sl. butter (warm) and 130g. Sahara. Pour the dough into the depression and quickly knead the dough. When bubbles begin to appear in the dough, add the remaining flour, candied fruits, raisins.
  • Grease a baking sheet. Split the dough in half, roll out slightly and tuck one longitudinal side to the middle. Put the dough on a baking sheet, cover with a towel and place in a warm place. Incl. oven for 180 gr. Bake for about 50-60 minutes. Spread the finished muffins with the remaining sl. melted butter and sprinkle with sah. powder.
