Ingredients

Corn flour 50 g (80 ml)
Wheat flour of the highest grade 375 g
Water 70 ml
Salt 1 tsp
Honey 60 g (3 tbsp. L.)
Butter - cut into pieces 20 g (1 1/2 tablespoons)
Dry yeast SAF-moment 1 3/4 tsp
Gluten 1 tbsp. l. + 1 tsp
Powdered buttermilk 1/3 cup
I replaced with
premixing together
Lemon juice
+ Milk
1 tbsp. l.
210 ml

(I think you can replace it with low-fat kefir)

Cooking method

  • Panasonic SD-255
  • Regular bread program, medium size (L), dark crust.

You can also bake gluten-free, since there is a lot of wheat flour. Gluten is added when the flour is heavy and does not have its own gluten (gluten), such as in corn flour

Tip: make the dough a little softer, add a little more water and then the crust will be smoother and the crumb softer (not dense as in the photo).
Powdered buttermilk can be replaced with kefir products, but then track the flour / liquid balance, the dough is soft (but not liquid)
