Jenny Schapter's Cornbread

Ingredients

Water 120 ml
Milk 60 ml
Salt 0.8 tsp
Fine brown sugar 1.2 tsp
Olive oil 0.8 tbsp. l.
Wheat flour 1 grade 220 gr.
Corn flour 80 gr.
Dry yeast 0.8 tsp

Cooking method

  • Pour ingredients into the HP bucket, according to the instructions, in my case in the order indicated. Track the gingerbread man, you may need to add a spoonful of flour.
  • Before baking, you can garnish with coarse corn flour, or simply corn grits.
  • The bread is delicious, "sunny" in color, fragrant, with a thin crispy crust. Looks spectacular in a bread plate.

Note

In the original recipe, the oil is not olive oil, but corn oil. I didn't have it, I replaced it.

Natasha, no, 1 grade is 1 grade, similar to the highest, a little gray, and whole grain is completely different, with bran. The package says "1st grade" or "whole grain" - you can't confuse it when buying. But if there is no 1 grade, you can replace it with a higher one. Good luck!

In some sources, in particular in the book attached to my HP, they write that 1 tsp. = 3 gr. Tatiana (Admin) writes that 1 tsp. = 4 gr. Therefore, I did not even try to weigh the yeast. And I measure out about 4/5 tsp. dry yeast.

It turns out good! I did everything according to the recipe, only a little more sugar (there, apparently, a typo - not teaspoons, but tablespoons?), And added raisins. It turned out great! Thanks for the recipe!

Why a typo? It is possible that there is a small amount of sugar, the more brown, it tastes different from white sugar

And the amount of sugar in bread is a matter of everyone's taste

Kamch, Tatiana - Admin is right, no typo. In the original recipe for 500 gr. flour author recommends adding only 2 teaspoons of light cane sugar. You can start from these numbers next time.

julka76, for a beginner, this is not a stupid question. Therefore, I answer - write down is it possible for you?... HP can and even must be opened at the kneading stage in order to control the bun. And if suddenly where she was mistaken, well, she did not measure the flour correctly, the children got confused under their feet, interfered with, then add it. Otherwise, a good bread will not work.
Read the section BREAD - ALL THE HEAD... Very useful for a beginner, but always read with a pen and notepad.

Salt - 1 tsp
Fine brown sugar (any other) - 2 tsp.

And I got up, it seemed to me, very little. Fresh yeast. Maybe we need more of them? For example, 1 teaspoon, not 0.8?
