Wheat flour 80 g

Canned Peaches 1 can (425g)
Agar / gelatin 5 g (1 tsp. With a large slide) / 15 g
Curd cheese 300 g
Peach yogurt 300 g
Sugar (did not put) 100 g
Lemon juice (not put) 4 tbsp. l.

Cooking method

  • Dough:
  • 1. Drain the juice from the jar with peaches. It turns out about 125 ml. Soak agar (gelatin) in it. Leave on for 30-40 minutes.
  • 2. Separate the whites from the yolks and beat with 2 tbsp. l. sugar into a stable foam. Postpone.
  • 3. Beat the yolks with 2 tbsp. l. sugar, lemon zest. Add butter, flour mixed with baking powder. Beat. Introduce proteins. The dough turns out to be liquid.
  • 4. Pour the dough into a mold and bake in an oven heated to 180 C for 10-15 minutes. I lined the shape with paper, as a result, the edges of the cake were not even. It is best to use paper only at the bottom of the mold.
  • 5. Remove the cake from the mold. Cool down.
  • Curd yoghurt soufflé:
  • 6. Bring the agar to a boil and boil for 1-2 minutes, stirring constantly. Dissolve the gelatin in a water bath.
  • 7. Beat curd cheese with yogurt, lemon juice, sugar. Add agar (gelatin), beat.
  • Assembly:
  • 8. Put the cooled crust in a baking dish, put chopped peaches on top. Put curd cream on top. With agar, the cream hardens almost instantly at room temperature. For gelatin, refrigerate the cake for 3-4 hours. In order to make it easier to take the cake out of the mold later, you can put strips of baking paper under the cake.
  • 9. If desired, the finished cake can be sprinkled with chopped chocolate.
  • Very delicate taste. Air cake !! Khvigura will not suffer !!!

  • 1. It is better to use a small form, about 20-22 cm. I had 24 cm - this is too much.
  • 2. It is necessary to coat with cream not only the top, but also the sides.
  • 3. Sugar should be put in the filling if you will do it, for example, with fresh strawberries.
  • 4. If you are going to make a cake for an event, it is better to make it in advance (1 day in advance). The next day it tastes even better !!!!
  • Lyrical digression:
  • I don't actually bake cakes. Not that at all, but absolutely, absolutely! But here there was no choice, I had to go for broke. I redrawn the original recipe for myself. As a result, it turned out very quickly and easily.

Starch should be added along with flour when kneading the dough. Unfortunately, I can't fix it in the recipe!

Agar must be added immediately, as it hardens very quickly. I boiled in Thermomix. Then I immediately added all the ingredients of the cream there and beat it. You can do the opposite: in a mixer, beat the cream and add agar to it.
